So yesterday I shared with you the recipe for 15 minute Gingerbread cookie dough and I can’t tell you how fabulous it is! We made a couple batches yesterday and it makes really good cookies. It’s a very sticky dough though, so I ran into a couple of problems when I was rolling it out. Well one in particular. Despite rolling it between two pieces of parchment and letting it chill, the dough still stuck to the parchment paper! How? I don’t know!
Well I’m here to tell you that if you roll it out the classic way, using a little flour to dust the surface, you’ll be good! And turn out with the cutest, most delicious gingerbread men (mine are cool half eaten men). I really want to get the karate gingerbread men cookie cutters!
I feel like I have to warn you too. These cookies will disappear from your kitchen like nobodies business. I’ve eaten um six? today? eek. They’re crunchy around the edges and soft and chewy in the center. They look store bought- but are wayyy better. I added a sprinkle of Turbinado sugar on top of mine before baking for a shimmery finish. My gingerbread men might be getting festive bow ties too.
