First of all, wasn’t the Royal Wedding absolutely beautiful! I set my alarm for 3am to watch it. Peanut was quite surprised when I got up. I turned on the TV, watched for 30 seconds, and then went back to sleep. I woke up a couple hours later just in time to see the kiss on the balcony. I fast forwarded to interesting parts on the recording during breakfast. Like Kate emerging from the car – she is absolutely gorgeous and the dress was stunning! My favorite parts were the small moments they shared. The little smiles back and forth, William being careful not to step on her dress, Harry looking over his shoulder to see Kate walking down the aisle and just grinning to William. Just too cute! And I loved reading their lips! I caught a couple of things but apparently William leaned over to tell Kate and her dad “We were supposed to have just a small family affair.” Brilliant! What a beautiful wedding!
Now on to more interesting news (jk) … I started a “diet” this week, well it’s more like a pre-cleanse/eating extremely healthy. I won’t get into the details but one of the things I’m not eating for the next 21ish days (if I can do it!) is sugar…

Yes, well let’s just say I had a massive headache yesterday from sugar withdrawal! eek!
It was a tad difficult to start but right now I’m feeling pretty dang good. Today was Day 3 and I was very excited because I found out that I could make these… Chocolate Almond Bars!
A chocolate bar without sugar! Say it ain’t so!
These Chocolate Almond Bars contain four simple ingredients packed with healthy goodness! It took me 15 minutes to make them from start to finish (I’m not kidding) and they are pretty dang delicious! They are absolutely perfect for a chocolate fix while on a health kick.
Chocolate Almond Bars
Notes: These are vegan and raw. Add as much sweetener as you like. I used agave nectar but honey or maple syrup would work as well but the amount will probably vary. As far as storage, I would keep these in the freezer or refrigerator. They melt pretty easily.
1/2 Cup Coconut Oil (slightly warmed, until stirring consistency)
1/2 Cup Cocoa
2 Tablespoons Agave Nectar
1/2 Cup Chopped Raw Unsalted Almonds
Unsweetened Shredded Coconut, chopped nuts or Dried Fruit (optional)
In a bowl mix together the coconut oil, cocoa and agave until smooth. Mix in the almonds.
Spread on a piece of parchment paper. Top with shredded coconut, dried fruit, or more nuts. Allow to set in the freezer about 10-20 minutes until hard to the touch.
Break or cut into pieces.
Now don’t you worry this diet of mine doesn’t mean that I’ll be posting only healthy recipes for the next month or so. I’ve got some amazing recipes in the arsenal just waiting to be posted. One is for the absolutely perfect ginger cookie – chewy, beautiful, and the perfect height (just wait till you see it).
