Chocolate Chestnut Pear Cake Recipe

As a trained French pastry chef, I bake all year long. But there’s something extra special about cozy winter baking, especially when I’m in someone else’s kitchen. And the Chocolate Chestnut Pear Cake I’m sharing today is the perfect cold-weather treat.

The base of this recipe is my Chocolate Chestnut Cake, which I shared on the blog years ago. In this variety, sweet poached pears are baked inside the chocolate and chestnut cake. It’s a truly show-stopping dessert that looks as incredible as it tastes.

I made this dish as part of my New Year’s celebration while staying at Maison Frederic in Provence. The home had a gorgeous kitchen and was just a short drive from the Provençal town of Uzes and its incredible market. I picked up some baking pears and had to put them to good use!

Chocolate Chestnut Cake Ingredients

A handful of classic ingredients, a little French flair, and some very good pears are all you need to make this chocolate chestnut cake shine.

  • Bittersweet chocolate (60–70%): This is the backbone of the cake’s flavor, giving it depth and richness without being overly sweet. A good-quality bittersweet chocolate melts smoothly and balances beautifully with the chestnut and pear.
  • Unsalted butter: Butter adds richness and moisture while helping create a tender crumb. Using unsalted butter gives you full control over the flavor and keeps the cake balanced rather than heavy.
  • Chestnut spread: Chestnut spread has a naturally sweet, nutty flavor and adds a luxuriously soft texture to the cake. Here in France, it’s easy to find. In the United States, you should be able to find it at gourmet groceries like Central Market or Whole Foods. Look for it in the baking section or jam section. Even Bonne Maman has a version.
  • Vanilla extract: Vanilla ties everything together. It’s used both in the cake and during pear preparation to add subtle flavor to the entire dessert. Use store-bought or try making your own.
  • Eggs: Eggs provide structure, richness, and stability to the cake. They help emulsify the batter so the cake bakes up smooth and cohesive rather than crumbly.
  • Granulated sugar: Sugar sweetens the cake while also contributing to its moisture and tenderness. It’s also used when preparing the poached pears to enhance their natural sweetness.
  • Flour: A low-protein flour (such as cake flour or French T45) creates a softer, more delicate crumb for this dessert, but all-purpose flour also works well. If you need more advice on choosing flour, be sure to check out my guide to French vs. American flour.
  • Baking powder: Baking powder offers just enough lift to keep the cake from feeling heavy, especially important when working with rich ingredients like chocolate and chestnut spread.
  • Pears: Of course, you can’t have Chocolate Chestnut Pear Cake without pears! Choose pears that hold their shape when cooked, such as Bosc, Anjou, or Comice. These varieties soften beautifully without collapsing and are easy to find at most grocery stores.

How to Make Chocolate Chestnut Pear Cake

This chocolate chestnut cake with poached pears comes together in a few simple steps, and none of them are complicated, which is exactly what makes it such a joy to bake.

Step One: Combine the chocolate, butter and chestnut spread.

Start by melting the chocolate and butter together over a bain-marie, stirring gently until smooth and glossy. Once off the heat, whisk in the chestnut spread. This step gives the cake its signature richness and silky texture.

If you don’t have a bain-marie, you can do this step two other ways:

Option 1: Microwave Method (Easiest)

Place the chopped chocolate and butter in a microwave-safe bowl. Heat in short intervals, stopping to stir between each round, until the mixture is mostly melted. Keep stirring until fully smooth, then proceed with the recipe.

This gentle, stop-and-stir approach prevents the chocolate from scorching and gives you the same silky result as a bain-marie.

Option 2: Direct Low-Heat Method

Add the chocolate and butter to a small saucepan and set it over very low heat. Stir constantly and remove the pan from the heat as soon as the chocolate is melted and smooth. Residual heat will finish the job.

The key here is patience: use low heat and constant stirring to keep the chocolate from overheating or seizing.

Step Two: Add the remaining ingredients.

In a separate bowl, whisk together the eggs, sugar, and vanilla until smooth. Add the chocolate chestnut mixture and stir to combine, then fold in the flour and baking powder just until the batter comes together.

Step Three: Prepare and poach the pears.

For the pears, core them from the bottom so they stay whole while removing the seeds and then poach them gently in simmering water with sugar and vanilla until they are just barely tender. They should be soft enough to easily pierce with a toothpick, but firm enough to hold their shape. Let them cool before assembling the cake.

Step Four: Assemble and bake the cake.

To assemble, spread half the batter into a greased baking dish, place the pears on top, and spoon the remaining batter around them. The pears should be supported in place by the batter with their tops peeking through the surface. I leave the stems intact for a rustic look.

Step Five: Bake the cake.

Bake until the center is just set and there’s no raw batter around the pears. Once cooled, finish with a generous dusting of powdered sugar for a simple and elegant look: exactly how this chocolate chestnut pear cake is meant to be served.My original Chocolate Chestnut Cake recipe featured a chocolate ganache glaze and whipped chestnut cream topping. I prefer a simple powdered sugar dusting for this pear version, but you could absolutely add the other toppings from the original recipe for more richness.

How to Store Chocolate Chestnut Pear Cake

This cake stores beautifully, which makes it a great make-ahead dessert. Once it has completely cooled, cover the cake tightly or transfer it to an airtight container. You can store it at room temperature for up to one day, especially if your kitchen is cool and dry.

For longer storage, refrigerate the cake for up to three days. The chocolate and chestnut flavors actually deepen over time, making the cake even better the next day. Before serving, let it sit at room temperature for about 20-30 minutes so the texture softens and the flavors fully open up.

Chocolate Chestnut Pear Cake

This simple French cake recipe features chocolate, chestnut spread and whole poached pears for a rustic but elegant dish.

Ingredients

For the cake:
  • 5oz (140 g) bittersweet chocolate (60-70%)
  • 1 stick (8tbsp/114 g) unsalted butter (room temp)
  • 225 g (about 1 cup) chestnut spread (like Clement Faugier)
  • 1 tsp vanilla extract
  • 3 eggs, room temp
  • 1/2 cup (100 g) granulated sugar
  • 1 cup (120 g) flour (T45, cake flour, or all-purpose)
  • 1 tsp baking powder
  • powdered sugar, to taste
For the Pears:
  • 4-5 small (about 3.5-4" tall) baking pears
  • 1/4 cup (50g) of granulated sugar
  • 1 tsp of vanilla extract
  • A little melted butter or olive oil, for brushing

Instructions

  1. Prepare the chocolate base: Set up a bain-marie by placing a heatproof bowl over a saucepan of gently simmering water. Add the chocolate and butter and melt together, stirring frequently, until smooth and fully combined. Remove from heat and let cool slightly, then whisk in the chestnut spread until glossy and uniform. 
  2. Mix the batter: In a separate bowl, whisk together the eggs, granulated sugar, and vanilla extract until smooth and lightly thickened. Add the cooled chocolate-chestnut mixture and mix until fully incorporated. Gently stir in the flour and baking powder just until combined. 
  3. Prepare the pears: Peel the pears if desired, then core them from the bottom to remove the seeds while keeping the pears whole. Place them in a saucepan and add enough water to fully cover the pears, along with the sugar and vanilla extract. Bring to a gentle simmer and poach for 8-10 minutes, until just barely tender. Remove the pears with a slotted spoon and transfer to a paper towel-lined plate to cool completely. 
  4. Assemble the cake: Grease an 8-9-inch cake pan. Pour half of the cake batter into the pan and smooth the surface. Arrange the cooled pears on top, standing straight up, pressing them gently into the batter. Spoon the remaining batter around and between the pears, leaving the tops slightly exposed. Brush the tops with the melted butter or oil. 
  5. Bake: Bake at 350°F / 175°C for 40-45 minutes, until the center is just set and no raw batter remains around the pears. A toothpick inserted into the cake portion should come out clean. 
  6. Finish and serve: Allow the cake to cool before dusting generously with powdered sugar. Then slice and serve!
