Buche de Noel French Holiday Baking Workshop

What you will learn:

  • How to make a Buche de Noel (or Yule log cake) from start to finish
  • Chocolate ganache and all it’s many uses from truffles to fillings!
  • A delicious espresso mascarpone or fruity raspberry filling (you choose!)
  • Piping to your heart’s desire
  • Meringue mushrooms – how to pipe and assemble them!
  • A unique upright cake method so you can see the swirls of buttercream and cake
  • Floral decoration techniques

A very special holiday class making your own Buche de Noel, a beautiful French holiday tradition.

We’ll be making the cake from start to finish, beginning with the light chocolate genoise cake, the fillings, and ending with decorating techniques! We’ll whisk together a chocolate ganache to smooth on the outside so it looks like wood, form mushrooms out of meringues, and then bring it all together with some gorgeous edible flowers.

Each will be unique, and each a gorgeous expression of cake creativity.

The class will end with styling and a photo session choosing from beautiful antique cake platters.  Then we’ll sit down for a tasting! As we devour our treats, we’ll sip Marie Antoinette tea from the King’s Royal Kitchen Garden (Potager du Roi) located just around the corner.

Please note that each student will be going home with a cake and a packet of recipes.
