Virtual Quiche, Salad & Citrus Cookie Class ✩

The perfect class to fall right around lunch or dinner time! Bring a little French feast into the kitchen with a quiche and salad with homemade French vinaigrette. Then for dessert, we’ll make an easy French cookie: Sable Biscuit with a gorgeous citrus flavor.

Learn how to make the French version of pie dough, pate brisee, from scratch and never look at a pie recipe with fear again! The quiche will be the classic Quiche Lorraine, so delicious with cheese and bacon (can be replaced with leeks). Then for a little healthy twist, we’ll walk through making a French vinaigrette from scratch for a crisp salad to pair with your quiche.

  • Recipes for: Pate Brisee, Quiche Lorraine, French Vinaigrette, and Sable Cookies
  • A list of equipment recommendations specific to this class
  • Access to a private Facebook group to share your creations, interact with fellow students and ask questions that come up

Ingredients Needed:

All purpose flour, unsalted butter, salt, bacon (or leeks), eggs, heavy cream, whole milk, gruyere or comte cheese, olive oil, Dijon mustard, white wine vinegar (or sherry or champagne), shallot (optional), citrus zest, granulated sugar, powdered sugar

Special Equipment Needed:

For the Quiche: You can use a big quiche pan (mine is 11″/28cm). If you don’t have a quiche pan, you can use a pie pan or a cake pan.  For the cake pan, you’ll need parchment to line it. In terms of sizes, an 8″, 9″ cake pan, or a large 10″ (20-25 cm) will work. To weigh down the pie crust while we prebake it, you can use pie weights, dried beans or rice, or even a smaller ovenproof pan that will fit inside. Any leftover batter can be baked directly in a greased muffin tin for crustless (super delicious) quiche.

For the cookies: a zester is good to have!

You can find recommendations for all of these HERE.
