Caramel Poached Apple Tart

This delicious Caramel Poached Apple Tart is comprised of poached apples sitting on top of a baked madeleine cake inside a tart crust with caramel and finished off with a bay leaf infused whipped ganache. 

Inspired by the apple orchards of Marie Antoinette’s hamlet at Versailles, this elegant tart captures the rustic charm of the queen’s countryside retreat with a touch of royal indulgence.

October 2026

Chocolate Almond Entremet

Because almond was a big flavor in desserts in the 18th century, we will be making this beautiful chocolate bavarois made with almond milk, a crunchy homemade feuillitine layers and rich chocolate almond financiers.

This elegant creation brings a classic Versailles ingredient into a beautifully modern pastry.

November 2026

Pistachio Raspberry Rose Saint-Honoré

Delicate cream puffs filled with luscious pistachio cream and raspberry-rose mousse come together in this elegant French pastry—sweet, floral, and fit for a queen.

Inspired by the iconic Saint-Honoré featured in Sofia Coppola’s Marie Antoinette (2006), this dessert brings a playful, romantic touch of Versailles to the table.

December 2026

Choux Swans with Chestnut (or Vanilla) Cream

Pâte à choux gets a royal makeover with elegant meringue necks and wings, delicate piped feathers, a touch of gold, and your choice of luscious chestnut or vanilla cream filling.

This delicate dessert is inspired by the fanciful hair decorations of the 18th century and the gardens of Versailles. Did you know that the Apollo Fountain was originally known as the Lake of the Swans?

January 2027

Let them eat…Brioche! Nougat, Cramique, and Tuiles

We're doing 3 recipes this month - one short and easy with lots of possibilities (tuiles!), a brioche filled with pearl sugar made with a Thangzhong technique, and nougat, now this one is more of a challenge - but it's oh so fun!

These are 3 recipes that would easily be nibbled on at courtly visits. Also, Marie Antoinette supposedly saying "Let them eat cake" is actually not referencing cake... but brioche! 

February 2027

Grapefruit Fleur d'Orange Mousse Entremet

This recipe is made up of grapefruit mousse made from a loose fruit curd, an inset of silky Fleur d'Orange Namelaka (a technique created by Valrhona that's a mix between a cremeux and a ganache), all nestled on almond cake with a crisp white chocolate feuilletine layer.

Inspired by the beloved orange blossom perfume scent of the 18th century—and the orange blossoms grown on the Versailles perfumerie ground—this elegant dessert is a celebration of a scent once associated with purity and fertility.

March 2027

Chocolate Raspberry Opéra Cake

Decadent layers of tender cake, rich chocolate ganache, and luscious raspberry buttercream come together in this irresistible take on the classic Opera Cake.

While this dessert is a 20th-century creation, we can’t help but imagine the kings and queens of Versailles enjoying it. And with not one, but two opera houses at Versailles, it feels right at home!

April 2027

Victorian Cake with Whipped Caramel Frosting

A gorgeous yogurt lemon cake with a fun technique: whipped caramel as a frosting for the inside! We'll take a traditional round shape and make it oval, and also dive into decorating with a Swiss meringue buttercream to make elaborate designs on the outside.

Inspired by the colorful, over-the-top cakes of Sofia Coppola’s Marie Antoinette (2006), this playful creation also nods to the elaborate cakes that were beginning to take center stage at Versailles.

May 2027

Strawberry Black Tea Panna Cotta Tart

A delightfully fresh tart featuring a fragrant black tea–infused panna cotta filling, juicy fresh strawberries, and a beautiful hibiscus jelly decoration.

Inspired by the growing tea culture of 19th-century France and the tradition of chilled fruit desserts, this tart is light, refreshing, and perfect for a summer day at Versailles.

Is Le Baking Club a monthly or yearly membership?
Le Baking Club is a French pastry baking membership with a wonderful virtual baking community, new recipes inspired by courtly celebrations, historic flavors, fragrant gardens, elaborate fashion, and the theatrical beauty of royal life at the palace of Versailles. The membership includes live and professionally filmed pastry classes that you can watch or bake along, plus monthly (optional) baking challenges!

You have the option to join the baking fun with a monthly ($28/month) or a yearly ($280/year) membership. When you join with the yearly membership, you get two months free!
What skill level is Le Baking Club for?
All skill levels are welcome in the club! Whether you’re new to baking or you’ve got a few ganaches under your belt, you’ll love what’s inside Le Baking Club.

All recipes are beginner-friendly and easy to follow, but when things get a little more advanced, I break it down so anyone can follow along. My love language is making French pastry simple and accessible to everyone!

Plus, this year we are adding specific notes to the monthly recipe modules so you can choose an easier route in a recipe or a more challenging one!
Are ingredient substitutions available for dietary needs?
Yes! Wherever possible I make recommendations to accommodate special dietary preferences. I can also make specific recommendations for food allergies (such as swapping nuts for another ingredient). We have a lot of gluten-free bakers that have no issues making our recipes. The only thing that can be tough is removing eggs from a recipe.

If you’d prefer to make smaller bakes for one to two people, I can help cut the recipe in half (this is almost always possible!).

How is Le Baking Club different from your French Pastry for Beginners course?
Le Baking Club is a monthly French pastry baking membership for bakers who want to have fun baking new recipes every month. There’s a fabulous mix of live classes on Zoom, professionally recorded classes, and community baking challenges to win prizes!

We also have some new things exclusive to Le Baking Club this year! We will send out "court notes," a monthly write up by a food historian on the historical background of the flavors of the recipe; level ups in recipes so you can choose the easier or more advanced route; a focus on a specific skill for the month; and special guest experts throughout the year, not just during the summer!

Think of the club as your new baking community where you can spend time doing what you love all year long: creating sweet treats in the kitchen each month (and eating them too 🤭)!

French Pastry for Beginners is a self-paced course for beginners who want to master the foundational skills and base recipes of French pastry. Once you master the base skills, you’ll be able to make dozens and dozens of French pastry recipes.

Think of the beginner’s course as a course you’ll complete in your own time to learn timeless baking skills and French pastry techniques, whereas Le Baking Club is an ongoing membership with new recipes each month!
Do you offer live baking classes outside of Le Baking Club?
Yes, but only on special occasions! During the holiday season and at special times throughout the year we will post one-time live baking classes available to the public. (These are classes outside of Le Baking Club membership. All classes in the membership are exclusive to Le Baking Club). Space is limited in my seasonal live classes, and they tend to sell out, so stay tuned and sign up fast! As a member of Le Baking Club, you get a 25% discount off of the public classes.

What equipment do I need?
Chances are, you already have most of the items you need in your cupboard!

When you join the club, you will receive a 2026-2027 Recommended Equipment List organized by monthly recipe so you know exactly what you need to make each recipe. I’m always mindful of offering budget-friendly recommendations or alternatives wherever possible, but if you have any specific equipment questions, feel free to reach out to me at contact@mollyjwilk.com.
What if I can’t make some of the live sessions?
To accommodate bakers across the globe, live classes inside Le Baking Club primarily happen at: 7pm Paris time (1pm ET, 12pm CT, 11am MT, 10am PT). Varying class times are always noted in the schedule sent out at the beginning of the year.

If you can’t make a live class, no worries! All live classes are recorded and posted to the monthly module so you can dive in whenever is most convenient for you.
Can my family attend the live classes with me?
Yes! You’re welcome to invite your friends and family over to tune into our live baking classes together as long as you are in the same kitchen. No sharing Zoom information with anyone without a membership! In my view, the more pastry chefs, the merrier!
What if I want to enroll for longer than 12 months?
Every year I dream up a brand new Le Baking Club baking schedule and theme, so we'd love to have you stick around for new treats and shenanigans next year too!

This year, the theme is "A Year at Versailles" where we will be making French pastry inspired by courtly celebrations, historic flavors, fragrant gardens, elaborate fashion, and the theatrical beauty of royal life. Each month, we'll explore ingredients and aromas reminiscent of the eighteenth century — almonds, pistachios, chestnuts, orchard fruits, spices, herbs, teas, rose, orange blossom, and caramel — reimagined through beautiful modern desserts. The collection takes inspiration not only from the tables and festivities of Versailles, but also from its gardens, perfumes, decorative arts, and the dreamy visual world of Sofia Coppola's Marie Antoinette.

If you are enjoying the club and can't wait for what is to come next year, you can simply stay enrolled. Your monthly or annual subscription will stay active until you choose to cancel.
How long do I have access to the material in Le Baking Club?
You’ll have access to all of the membership content (recipes, live class recordings, professionally filmed classes, members-only baking community, member perks, etc.) only for the duration of your membership.
Can I cancel at any time?
Of course! If you need to cancel your membership, you’re able to do so at any time through our online platform or by sending us an email at contact@mollyjwilk.com.
