Pumpkin Ginger Cookies

This summer Lizi, The Food Nanny, came to visit and introduced me to Kamut flour – holy moly – I LOVE it!! We’ve been making recipes together and I just recently came up with this one… Pumpkin Ginger cookies with a cinnamon glaze and a fun pumpkin on top! They’re chewy, insanely good, and super easy to make!

To make the cookies, head to this post on the Food Nanny website… we’re going to use her recipe and add some pumpkin in 😀 Use either Kamut or All purpose flour – replace both the oil and the butter with the following… 1 cup softened butter and 1 cup pumpkin puree (like Libbys). I reduced the ginger in half too so the pumpkin could soar!

For the glaze, whisk together 1 cup of powdered sugar, 1-2 tablespoons of milk and 1/4 tsp ground cinnamon. Drizzle over the cooled cookies and add a pumpkin candy!
