Ingredients
- 2 sticks + 5 tbsp (300g) unsalted butter, room temp
- 1 1/3 cup (266g) granulated sugar
- Zest of 1 lemon
- 4 large eggs, room temp
- 1 tsp vanilla extract
- 2 cups (250g) all-purpose flour
- 3/4 tsp baking powder
- 1/2 salt
- 1/3 cup (80ml) milk (any kind)
- 2 tbsp freez-dried raspberry powder
- 1 bag (250g/8.8 oz) Valrhona Raspberry Chocolate
- 1/3 cupe (80 ml) heavy cream
- French Raspberries for decoration (optional!)
Instructions
- Preheat your oven to 350F/175C
- Beat together the butter, granulated sugar, and lemon zest until soft and fluffy. Add the eggs, mixing them in 1 by 1. Add the vanilla extract. Slowly add the dry ingredients. When they are just about mixed in, pour in the milk.
- Divide the batter in two and add the raspberry powder to ½ of the batter, mixing in.
- Spray a bundt or loaf pan with baking spray, making sure to get into the grooves.
- Add blobs of dough, alternating the flavor of each. Swirl together.
- Bake 45-60 minutes
Ganache Icing:
