It seems like fall just started in our part of the country. There’s a bit of chill in the air, the leaves are changing, and a huge selection of apples are at the store just waiting to be used in fun recipes. Like this one, Spiced Apple Drops. Made with apple cider or juice and a diced apple. These sweet cookies with a hint of cinnamon, nutmeg, and cloves are a perfect snack by the fireplace with a cup of warm apple cider. Happy Fall! I just had to post this recipe before December in all it’s holiday glory hit.
Spiced Apple Drops
Adapted from Cookie Classics by Better Homes and Gardens.
1/2 cup butter
2/3 cup granulated sugar
2/3 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/4 cup apple juice or apple cider
2 cups all-purpose flour
1 cup finely chopped apple
1 cup chopped walnuts or pecans
Lightly grease a cookie sheet and set aside. Preheat oven to 375 degrees.
In a large mixing bowl beat butter and sugars until creamed together. Add the cinnamon, baking soda, nutmeg, and cloves. Beat until combined. Add egg and apple juice or cider. Then add the flour, apple, and walnuts. Mix until just combined. Drop dough by rounded teaspoons onto prepared cookie sheet.
Bake 10 to 12 minutes or until edges are lightly browned.
To make glaze, combine 1/2 cup powdered sugar with 1-2 tablespoons of apple juice or cider and a dash of vanilla. Adjust with cider and powdered sugar until you’re happy with it’s drizzling capability.
