Happy 10th day of December! The malls are getting crazy with present-shoppers! We just finished putting up our tree and it is gorgeous!
Today’s treat is Cranberry White Chocolate Cookies, a festive take on a classic chocolate chip cookie.
The base is very easy, cream butter and sugars together than add white chocolate and dried cranberries!
A little bit of cornstarch is added to make the cookies more tender.
These are crisp on the outside and melt-in-your-mouth chewy on the inside.
White Chocolate Cranberry Cookies
Adapted from Sally’s Baking Addictions.
3/4 cup unsalted butter, room temp
3/4 cup dark brown sugar
1/4 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup white chocolate (block cut in pieces or chips!)
3/4 cup dried cranberries
Preheat oven to 350 degrees and prepare cookie sheets with parchment paper or a silpat.
In a mixer, blend together the butter and sugars. Add the egg and vanilla and mix until combined.
Whisk together the flour, cornstarch, baking soda, and salt in a small bowl then add to the butter mixture.
Stir in the white chocolate and cranberries.
Drop by the tablespoon onto prepared sheets and bake exactly 9 minutes. Allow to cool on baking sheets then transfer to a cooling rack.
